| Do any of you do it?
I admit that I don't know much at all about it. But, recently I had someone contact me and explain it a bit and tell why she did it for her family.
I'm just wondering - if done without chemicals or additives - could this be one way to increase variety for gliders in the winter months when many fruits are no longer in season? Around here, we are lucky to have apples, oranges & bananas all winter, so I find that I rely on freezing fruits to add variety in the winter. Could canning be another option?
Is it time intensive? Someone tell me more about it!!!!!! | |

| http://farmgal.tripod.com/In high school we canned fruits and found Lemon juice to keep the color better than vitamin C. I don't know why we did it.. but it worked. And the syrup made them look nicer and taste better but without syrup it still worked. | |

| I have canned tomatoes and peaches pears before. It can be time consuming depending on the fruit. Pears are a pain in bum to.peel. You need real good fruit or it can spoil the jar. I would say to try a small batch before you buy a ton of fruit or veggies and give it a whirl. If I remember right the acid is what keeps the color, like was stated with the lemon juice. | |

| Well I missed this topic the first time around as I had just got home from having Miss Charlie! We have laden Fruit Trees this year though, so I need to learn to can fruit.

Noooo don't say that! I have 3 trees full of pears. I do have one of those apple peeler thingies though, I wonder how well it will work for pears. | |

| I used to can all sorts of things....before kids came along. I am going to get things back out again this year. You can always freeze the fruit :-) | |

| Apple peelers work pretty well on pears. :) No need to do them with a paring knife, takes forever!
I have canned. Yes, it can take a bit of time but Val, with the number of gliders you have, it would be well worth it. For only a couple of gliders, you'd either need very small cans/jars or you'd have to make sure you were going to use up what you open because they won't stay good for very long once you crack the seal. | |

| I know I am late to the party, but I can...and I feed to to my family and my gliders. I was taught how to can from my grandparents (and read up on the procedure for new safety updates). "they won't stay good for very long once you crack the seal." This is very true! Also, please check your seal before you attempt to open it as well, and if it didn't get a good seal and the seals already cracked-throw it out to the wildlife or something-do not feed it to your family or your gliders. It does take time, I am not going to lie, to sit and prep the food, then can it, but their are millions of recipes/tips and tricks, and as long as the seal or glass isn't broken the food can last for years (not as long as store bought canned food though) with MUCH less of the nasty preservatives found in store bought canned food. AND it has an added bonus! If you grow the food or get it from a farmer you trust, you will know exactly what was used for that plant (like...if they used pesticides, if they drove their vehicles around it a lot for the plant to get the fumes etc). | Gotcha. I didn't have a clue what "The Produce Stand" was, thought it sounded like a good blog name! LOL :)
I read a few good websites today and am getting a list of equipment I need.
My neighbor cans too (they have a HUGE garden) so I'll go get some tips from her too.
In the past few years our trees haven't produced enough to worry about, we either eat it fresh or the excess apples got turned into apple sauce and froze.
This year we will have pears, apples, peaches, plums and nectarines.
My Mum used to make lots of jam when I was growing up, wish she was still here to teach me. I think once I start though I might remember more. | |

| Update!!! I didn't can any peaches or pears yet, the fruit isn't ready.
BUT, I did successfully make Blackberry Jam!!! I was super happy it turned out good and I can't wait to give canning peaches and pears a go! | |

| I learned something new yesterday...you can freeze tomato's whole and then can them when you have enough to do a decent batch. You just put the tomato's in the freezer after you wash and dry them, take them out and thaw, place in water bath to peel and continue with your recipe.
I have not tried this but my niece has and said it works great. She makes the best Salsa too! | |

| I freeze them whole to use later in soups and stews. Works great if you realize you aren't going to use it before it goes bad. Or if you just want an easy way to peel pne that will be cooked. | |
