Gumbo


1 chopped onion
1 chopped green pepper
3 cans beef broth (or use bouillon)
1 cup frozen okra
Polish sausage
1 can crushed tomatoes
1 can tomato paste

In large pot, combine ingredients and simmer.

Add 2 cups cooked rice just before serving.

Butterscotch Delight


1 stick oleo
1 cup flour
1/2 cup chopped nuts
1 8 oz package of cream cheese
3 cups milk
1 cup powdered sugar
1 12 oz tub cool whip
2 small packages of instant pudding (your choice of Butterscotch, chocolate or lemon - here we used butterscotch)

Beat together oleo, flour and nuts. Press into a 9X12 inch pan. Bake at 350 degrees about 20 minutes. Cool.
Mix together cream cheese, powdered sugar and 1 cup of cool whip.
Spread on crust.
Beat pudding and milk together until thick
Pour on cheese layer
Spread rest of cool whip over pudding and sprinkle with nuts.
Chill before serving
